What to know about pink beans

Pink beans, habichuelas rosadas, are the small rosy bean of Puerto Rican and Dominican cooking, stewed into habichuelas guisadas and spooned over white rice. The bean itself is high in galacto-oligosaccharides and rated poor for SIBO, high in nickel and lectins, and moderate in salicylates and oxalate, while being clean on gluten, lactose, histamine and nightshade. The complication is that pink beans almost never reach the plate on their own. The sofrito, tomato sauce, cured pork and seasoning cubes they are stewed with contribute fructans, nightshade, nitrites and free glutamate that have nothing to do with the bean, which makes this one of the easiest dishes to misread in a food journal.

Watch for

  • High in GOS and rated poor for SIBO, so the fermentation reaction typically lands a few hours behind the meal, often after you have moved on to blaming something else
  • The bean is low in fructans, but sofrito is built on onion, garlic and culantro, so the fructan load in habichuelas guisadas comes out of the pot rather than out of the pulse
  • Stewed versions usually carry tomato sauce and sweet peppers (nightshade), ham hock, bacon or smoked pork (histamine and nitrites) and sazon or bouillon cubes (free glutamate); log those separately or the bean takes the blame for all of them
  • High in nickel and lectins, with moderate salicylate and oxalate, so pink beans push four slow-building loads up at once even on a day the gut copes fine
  • Tinned pink beans are frequently packed in a seasoned or chilli sauce rather than plain water, so check the label before assuming a rinse returns you to a plain bean
