Sensitivity notes

Why sulfites food checker matters

Sulfites are preservatives found in wine, dried fruits, and processed foods. They can trigger asthma symptoms, headaches, and allergic reactions in sensitive individuals.

  • Dried fruits are often high in sulfites unless labeled 'unsulfured'
  • Wine, especially white, commonly contains sulfites
  • Fresh foods are naturally sulfite-free
  • Check medication labels - some contain sulfites
  • Look for 'contains sulfites' on labels (required above 10ppm)

What to know about gluhwein

Gluhwein, the hot spiced red wine of European Christmas markets, is one of the most heavily stacked drinks in this database. The red wine base alone carries histamine at D, sulfites at D and tyramine at C. The mulling spices layer on salicylates at D, since cinnamon, clove and star anise are among the most salicylate dense ingredients in any kitchen. Then comes the added sugar, which lifts total FODMAPs and excess fructose to C and pushes the SIBO grade to D. Almost nobody reacts to one thing in gluhwein. They react to four at once, delivered warm, which is why a single mug can hit harder than a glass of the same wine cold.

Watch for

  • Histamine at D and a histamine liberator grade of C.Red wine is consistently among the worst histamine offenders here, and it both delivers histamine and prompts release of your own
  • Sulfites at D.Wine is one of the few everyday sulfite exposures large enough to matter, and heating does not remove them
  • Salicylates at D, driven by the spice blend rather than the wine.Cinnamon, clove, star anise and citrus peel are all salicylate rich, so the spicing is a second independent trigger
  • Tyramine at C from the wine, which is the grade that matters if you take an MAO inhibitor or get reliable wine headaches
  • Served hot, which speeds gastric emptying and alcohol absorption, so the same dose reaches you faster than a cold glass would
  • Added sugar puts it at C for excess fructose and D for SIBO, on top of the alcohol itself
