What to know about brandy

Brandy is a spirit distilled from wine, so it begins as fermented grapes and is then concentrated in the still and usually aged in oak. Distillation makes it gluten-free and removes most of the histamine that sat in the original wine, but the alcohol still counts: brandy is graded a strong histamine liberator, so flushing, a runny nose or a headache can follow a small glass. Because the base is grape rather than neutral grain, its tyramine, sulfite and salicylate load sits in the borderline range, a touch more wine-like than a plain grain spirit.

  • Strong histamine liberator from the alcohol itself, so it can set off flushing and headaches even though distilling removes most of the histamine the base wine carried.
  • Made from grapes and distilled, so it is gluten-free while keeping faint borderline traces of the wine style sulfites and tyramine.
