What to know about hazelnut oil
Hazelnut oil is a tree nut oil first and a cooking fat second, and that ordering matters. On the trigger grades the oil itself is clean: A for histamine, histamine liberation, salicylates, oxalate, nickel, sulfites, glutamates and all the FODMAP subgroups, which is a noticeably better card than the whole nut, graded C for FODMAPs, C for galacto-oligosaccharides, C for histamine and D for nickel. Pressing leaves the carbohydrate and the minerals behind in the nut meal. What pressing does not reliably remove is protein, and hazelnut oil is nearly always sold cold-pressed as a dark, aromatic finishing oil rather than refined, so the "highly refined oils are usually allergen-safe" reassurance that applies to a bottle of neutral frying oil does not transfer here.

- Tree nut allergen.Culinary hazelnut oil is unrefined by design, because the roasted-nut aroma is the entire point of buying it, and unrefined nut oils retain measurable nut protein. Anyone with a hazelnut or general tree nut allergy should treat it as the nut, and should not test it at home
- Hazelnut grades D for nickel, hazelnut oil grades A.If you follow a low-nickel diet the oil is genuinely usable where the nut is not, since nickel stays with the solids during pressing
- The same split explains FODMAPs.Whole hazelnuts are C for FODMAPs and C for galacto-oligosaccharides, but an oil carries no carbohydrate at all, so it is graded A and a spoonful will not add to a FODMAP load
- It is a delicate oil with a low smoke point that turns bitter with heat and goes rancid faster than most.Buy small bottles, keep it in the fridge once opened, and use it off the heat
