What to know about white wine
White wine is a triple trigger: high in histamine, high in salicylates and very high in sulfites. The twist people miss is the red-versus-white contrast. White wine is lower in histamine than red wine, but it usually carries more added sulfites, because it lacks the protective tannins of red and needs extra preservative. So if red wine gives you a stuffy nose and flushing while white gives you a headache, sulfites are the likely reason.
Watch for
- Very high in sulfites, often higher than red wine, because white wine has fewer natural antioxidants and gets more added preservative: a common cause of headache and wheeze
- High in histamine, though lower than red wine, so it can still trigger flushing, congestion or hives
- High in salicylates from the grapes, a separate trigger if you react to aspirin or salicylate-rich foods
