What to know about pompano
Pompano is an unusually quiet fish on a trigger panel. It is rich and oily, which normally predicts a histamine problem, yet it grades clean on histamine, clean on gluten, lactose and every FODMAP subgroup, and clean on salicylate-adjacent seasonings once you leave the sauce off. It is also not one of the seven fish on the FDA and EPA "Choices to Avoid" list. If pompano has shown up in your journal as a trigger, the honest first suspect is what came with it, because pompano is a restaurant fish that arrives under beurre blanc, capers, brown butter or a citrus reduction.
Watch for
- Low FODMAP as a plain fillet, so a reaction after a pompano dish points at the sauce, the shallots or the bread rather than the fish
- A jack (Carangidae).The ciguatera warnings that apply to this family are aimed at large reef-associated jacks such as amberjack, not at the small farmed Florida pompano sold at most counters
- Some savoury depth from naturally occurring free glutamate, which is worth knowing if you track MSG-type reactions to umami-rich foods
