What to know about armagnac
Armagnac is grape brandy from Gascony, and the thing that separates it from every other brandy is the still. Where cognac is distilled twice in pot stills and comes off at above 70 percent alcohol, armagnac goes once through the alambic armagnacais, a small continuous column, and comes off at only about 52 to 60 percent. A lower distillation strength means less is stripped out, so armagnac arrives in the barrel already carrying more congeners than its neighbour does, before oak adds any of its own. That is the practical read on the amine grades: histamine, histamine liberation and tyramine all sit at moderate, three separate borderline loads arriving together in a drink whose ethanol is simultaneously blocking the enzyme that clears the first of them. It grades clean on gluten, every FODMAP fraction, lactose, oxalates, nickel, sulfites and free glutamate, so nothing in a glass of armagnac is a trigger except what the fermentation, the still and the ethanol put there.
Watch for
- Three moderate amine grades at once: histamine (C), histamine liberation (C) and tyramine (C).They are individually unremarkable and collectively the reason a single measure can produce flushing, a blocked nose and a headache out of proportion to the volume. Ethanol also inhibits diamine oxidase, so the histamine you drink lands on a temporarily disabled clearance system
- Single distillation at low strength is a flavour decision with a physiological tail.Congeners, the fermentation and barrel byproducts that survive the still, track with hangover severity, and armagnac is deliberately made to keep more of them than a double-distilled or column-rectified spirit does. If dark spirits treat you worse than clear ones, this is the mechanism, not the alcohol content
- Vintage bottlings change the picture.Armagnac is one of the few spirits routinely sold as a single year, and those bottles can carry twenty, forty or sixty years in Gascon oak. More barrel time means more extracted material in the glass, so an old millesime is not a gentler drink than a young blend just because it tastes smoother
- Graded pro-inflammatory (D), poorly against DASH (D) and only borderline against the Mediterranean pattern, and it is not paleo or AIP compliant.Those are diet-fit grades, but they are the ones that describe alcohol honestly
- Borderline on salicylates (B) from the grape base.Minor on its own, and relevant only if you are already stacking salicylate-heavy foods that day
- The serve is often the bigger problem.Armagnac drunk neat is one exposure; a cocktail that adds lemon juice is another, since lemon is graded a strong histamine liberator in its own right and will do more damage to a histamine-sensitive evening than the spirit does
