Lamb is the red meat that turns up most often as a novel protein on elimination diets, and its grades explain why. Fresh lamb is low histamine, no histamine liberator, and clean on gluten, lactose, nickel, sulfites, nitrites, salicylates, free glutamate, tyramine and nightshades. If you are hunting a trigger and want an unambiguous protein to build a baseline meal around, lamb is one of the short list of foods that qualifies.
