Ingredient notes

What to know about white pepper

White pepper is the ripe Piper nigrum peppercorn with its dark outer skin soaked away, leaving the pale inner seed that gets ground into light coloured sauces like bechamel and mashed potato. Its real trigger is salicylate, graded D, the same as black pepper. Some databases and strict AIP diets file all peppercorns under nightshades, but botanically white pepper is not a true nightshade at all: it is the seed of a pepper vine, unrelated to tomato, potato and eggplant.

Watch for

  • High in salicylates (grade D), the main reason white pepper can trigger salicylate sensitive people
  • Often hidden in pale sauces, dressings and mash where you cannot see the specks, so it is easy to miss on an elimination diet
  • Excluded on strict AIP as a peppercorn, though this is a seed spice rule, not because it is a botanical nightshade
