Piri piri sauce is the Portuguese and southern African bird's eye chili sauce built on chili, garlic, lemon and vinegar blended with oil. Two grades drive nearly every reaction to it: nightshade at D from the chilies, and fructans at D from the garlic, which also pushes total FODMAPs to D. What surprises people is the histamine grade, which is A. Despite the vinegar, this is not rated a high histamine condiment, so a reaction to piri piri is usually about the pepper, the garlic, or the raw physical burn rather than about histamine. That burn deserves its own line: capsaicin irritates nerve endings directly, which is a mechanical problem entirely separate from any food chemical you might be sensitive to.
Watch for
- Nightshade D.Bird's eye chili is the whole point of the sauce, so there is no low-nightshade version of it
- Fructans D and total FODMAPs D, almost entirely from the garlic that defines the flavour.This is the grade that catches IBS readers who assumed a spoonful of sauce was too small to matter
- Capsaicin heat is an irritant, not a chemical sensitivity.It can drive reflux, urgency and mouth or gut burning in people whose trigger panel is otherwise clean, and the intensity scales with the chili content rather than the serving size
- Sulfites at C from the vinegar, and free glutamates at C from the fermented and concentrated pepper base
- Histamine content is graded A.Do not blame this one on histamine unless the bottle has been open in the fridge for months
