A jar of zaatar spice mix is a ratio rather than a recipe, and the ratio moves with the region: Lebanese blends lean sumac-forward and generous with sesame, Palestinian ones foreground the wild hyssop itself, and some Syrian and Turkish versions fold in caraway or aniseed. The mix grades borderline C for salicylates, which is what concentrated dried herb plus sumac should look like, and it grades A for gluten, lactose, dairy protein, nightshade and every FODMAP subgroup. - Salicylate grade is borderline (C) and portion decides it.A dusting over labneh is a different exposure from a saucer of olive oil thick with zaatar, or a manakish baked under a full crust of it
- Because the blend is defined by ratio, sumac, salt and sesame content vary a lot between brands and between home blends.If one jar bothers you, log the brand and not just the word zaatar
- Blends that add cumin or dried chilli change the picture: cumin grades D for salicylates and chilli is a nightshade, neither of which the base blend carries
- Some mixes add garlic or onion powder, which are high-fructan and would pull the otherwise clean FODMAP grade upward
