Green cardamom (Elettaria cardamomum) is moderate in salicylates with a mild histamine-liberating and mild free-glutamate note, and clean on everything else: no histamine, no nickel, no tyramine, no FODMAPs. For a spice this aromatic that is a mild profile. The bigger practical issue is what you are actually buying. Green cardamom is the third most expensive spice in the world after saffron and vanilla, which makes ground cardamom a standing target for adulteration with cheaper Amomum and Aframomum seeds, husk and filler. Watch for
- Moderate salicylate, the main chemical flag, and it stacks with the other warm spices in a chai or a garam masala rather than acting alone
- Ground cardamom is frequently cut with cheaper relatives, husk or unrelated filler because the real thing is so costly, so an unexplained reaction to a powder may be to whatever else is in the tin
- Mild histamine liberator and mild free glutamate, both low enough to ignore for most people but worth noting if you are counting every source
- Not the same spice as black cardamom (Amomum subulatum), which is dried over open fire and tastes smoky and camphorous.Recipes rarely mean them interchangeably and they are separate entries
