What to know about galangal
Galangal is a rhizome in the ginger family, but it is a different plant (Alpinia galanga) with a sharper, piney, almost citrus-peel bite where ginger is sweet and hot. That distinction matters if you are tracking triggers: galangal is graded moderate on salicylates, a full step below ginger, and it is clean on histamine, histamine liberation, nickel, glutamates, tyramine and every FODMAP group. For anyone building Thai curry paste, tom kha or a Malaysian rempah while watching salicylates, galangal is the more forgiving half of the ginger family.
Watch for
- Moderate salicylate content, which is the only real chemical flag on galangal and the one to watch if aromatic herbs and spices already push you over
- Curry pastes are the practical problem, not the root itself: Thai red and green pastes pair galangal with chilli, shrimp paste and garlic, all far bigger triggers than the galangal
- Slightly raised oxalate, low enough to ignore at cooking quantities but worth noting if you are on a strict kidney stone protocol
