What to know about caper berries
Caper berries are the fruit of the caper bush, and they are not the same thing as capers, which are the unopened flower buds picked off the same plant before it blooms. Berries are grape-sized, usually served with the stalk still attached, seedy inside, and much milder than the buds. Almost all of them reach you in a vinegar and salt brine, and the brine is where the trigger story sits. We grade caper berries C for histamine and C for sulfites, which is identical to the grading on capers, so swapping buds for berries buys you nothing chemically even though the flavour is gentler. Everything else is clean: A for histamine liberation, tyramine, salicylates, oxalates, nickel, nitrites, glutamates and gluten. FODMAP content is unrated, though the portion is a handful of berries, so brine and sodium are the realistic issues rather than fermentable carbs.
Watch for
- Histamine C.Fruit that spends months in an ambient brine accumulates biogenic amines, and a jar that has been open in the fridge for weeks sits at the worse end of that range
- Sulfite C.Commercial caper brines commonly carry sulfiting agents, either from the vinegar or added as a preservative, which matters if wine or dried fruit already sets you off. Read the jar, and prefer salt-packed if you find it
- Graded the same as capers on both histamine and sulfites, so moving from capers to caper berries is a flavour decision, not a trigger fix.If capers are on your reaction list, treat the berries as the same food for testing purposes
- Heavily salted whichever way they are cured.Rinsing cuts sodium and washes off surface brine, but it does not remove histamine that has already formed inside the fruit
