What to know about white wine
White wine is a triple trigger: high in histamine, high in salicylates and very high in sulfites. The twist people miss is the red-versus-white contrast. White wine is lower in histamine than red wine, but it usually carries more added sulfites, because it lacks the protective tannins of red and needs extra preservative.
