What to know about perry
Perry is cider made from pears rather than apples, and swapping the fruit changes the sugar profile more than the label suggests. Pears carry excess fructose and sorbitol together, and perry inherits both: it grades at the very top of the scale for total FODMAP and for excess fructose, with high polyols alongside. That double hit is the reason perry can produce bloating, wind and urgent, watery stools in someone who handles a dry apple cider reasonably well, since our apple hard cider entry grades one step lower on both total FODMAP and fructose. Perry also grades high for sulfites, higher than apple cider does, and worst-in-class for SIBO. The amine and salicylate columns sit at moderate.

- Worst-in-class SIBO grade, the predictable result of fermentable fruit sugar arriving with alcohol
- Sweet and medium perries hold back more unfermented pear sugar than a dry one, so style shifts the fructose and sorbitol dose meaningfully
