What to know about salami

Salami is a fermented, dry-cured sausage, and the same process that gives it its tangy, aged flavor also raises several triggers. Weeks of fermentation and drying build up histamine and tyramine in the meat, sodium nitrite is added as a curing preservative that pushes nitrites high, and the fermentation makes it a mild histamine liberator too.
