What to know about chevre
Chevre is the fresh, soft, unaged goat cheese sold as a log or a tub, and it sits in an awkward middle on food triggers. It is graded high for histamine, high for tyramine and high as a histamine liberator, so it is not a safe pick on a low histamine diet, but it does sit a step below the long aged cheeses like parmesan and gorgonzola that top the amine charts. The trade-off runs the other way for milk sugar. Because chevre is barely ripened, it keeps more of its lactose than an aged cheese does, so it lands at moderate lactose where a two year parmesan has almost none left. It is also graded at the maximum for dairy protein, and goat casein is close enough to cow casein that a diagnosed cow milk allergy generally rules chevre out too.

- Graded high for histamine and high for tyramine despite being a fresh cheese, because the lactic starter cultures that set the curd begin producing amines within days
- Also graded a strong histamine liberator, so it can prompt flushing, itching or headache separately from the histamine it already contains
- Moderate lactose, higher than any aged cheese, since fresh curd has not had months to ferment its milk sugar away
- Maximum grade for dairy protein.Goat casein cross-reacts heavily with cow casein, so chevre is not a workaround for cow milk protein allergy
- Bloomy rind and ash ripened goat logs are held far longer than a plain fresh log and climb higher again on histamine and tyramine
