Ingredient notes

What to know about chai tea

With chai, the black tea is the boring half. The spice blend is what changes the picture: cinnamon, ginger, clove, cardamom and black pepper are each salicylate-dense on their own, and together they lift chai to a moderate salicylate rating where plain black tea sits at mild. Caffeine is moderate and comes entirely from the tea, not the spices. The other thing worth knowing is that chai is one of the few drinks where brew strength decides the FODMAP answer: a quick weak brew tests low, a long strong steep tests high, because more fructan comes out of the botanicals the longer they sit.

Watch for

  • Moderate salicylates, driven by the spice blend rather than the tea.If you have been fine on breakfast tea and react to chai, this is the first thing to suspect
  • Brew strength changes the FODMAP result: Monash testing found weakly brewed chai low FODMAP and strongly brewed chai high, so a two minute steep and a five minute steep are genuinely different drinks for a sensitive gut
  • A cafe chai latte is rarely just tea and spice. Most run on a sweetened concentrate, so you are also drinking added sugar, and the milk decides the lactose question
  • Mild ratings on histamine, histamine liberation, tyramine and oxalate, plus a moderate caffeine load from the black tea base
