The hull is not just cosmetic: it holds the large majority of the seed's oxalate and most of its calcium, so hulling genuinely changes the trigger profile. - Moderate fructan grade at volume, which is easy to reach when sesame is a coating or a crust rather than a garnish, plus a borderline EoE grade
- Clean or near-clean everywhere else: safe grades for gluten, lactose, dairy protein, tyramine, sulfites, nightshade and lectins, with an anti-inflammatory rating at the good end
