What to know about carp

Carp is a freshwater fish that is clean on almost every food-chemistry trigger we grade: no salicylates, no oxalate, no nickel, no free glutamate, no lactose and no FODMAPs. Its one real flag is histamine, graded moderate, and that has less to do with the fish than with how carp is traditionally eaten. The muddy, earthy taste carp is famous for is a separate thing entirely: it comes from geosmin absorbed out of the water, which is an odour compound, not a trigger.
