Perch is the classic panfish of European and North American fresh water, yellow perch in the Great Lakes and European perch across the rivers and lakes of Europe, and it is one of the calmer fish in our data on the triggers people usually worry about. Histamine A, tyramine A, no histamine liberation on record, no gluten, no lactose, no FODMAPs, no nickel, no sulfites, no nitrites. Two flags sit against it: our data grades perch moderate for both salicylate and oxalate. Those are plant chemistries and a plain white fillet is not a plant, so treat the rating as a conservative one rather than evidence that perch is loaded, but log a portion if you are counting either strictly rather than assuming it is a free food. The more useful caution for most people is that perch almost never arrives plain. It is the fish of the Friday fish fry, which means flour, breadcrumb or beer batter, and it is very often a fish somebody caught themselves, which brings freshwater contaminant advisories into the picture in a way that supermarket cod never does.
