Ingredient notes

What to know about chana dal

Chana dal is the desi (kala chana) chickpea, hulled and split, and its main flag is galacto-oligosaccharides, graded high. That single FODMAP subgroup is what drives the gas and bloating people report, while the overall FODMAP grade lands only moderate because hulling strips away much of the skin. It also grades poorly for SIBO and moderate for nickel, which matters if you have a nickel allergy and are already avoiding pulses, oats and cocoa. Everything else reads quiet: clean on gluten, lactose, salicylate, sulfite and nightshade, with only mild marks against oxalate, free glutamate and histamine liberation.

Watch for

  • High in galacto-oligosaccharides, the bean sugar most people cannot digest, so wind and distension a few hours later is the classic chana dal reaction
  • Moderate overall FODMAP rather than high, because the hull is removed before splitting.Small portions can sit fine where a whole-chickpea portion does not
  • Poor for SIBO.Dal, besan pakora and roasted chana dal chutney in the same day is a heavy fermentable stack
  • Moderate nickel, worth logging if you have systemic nickel allergy, and moderate lectin content in the raw dried form
  • The sweets angle catches people out.Chana dal cooked into puran poli, payasam or besan-based mithai brings sugar and ghee alongside the pulse, so the trigger may be mixed
