What to know about whitefish
Whitefish is two different foods wearing one label. It can mean the actual freshwater whitefish, a lake species in the salmon family that reaches most people smoked, and it is also used loosely for any lean white-fleshed fish such as cod, haddock, pollock or sole. Either way, fresh whitefish is one of the cleanest proteins you can log: graded clean for FODMAPs, gluten, lactose, salicylates, oxalates, nickel and sulfites, with only a moderate histamine grade against it. That histamine grade is the whole story, and it is really a question of handling. Fish accumulates histamine after it is caught, so a fillet cooked the day you buy it is a very different food from smoked whitefish that has been cured, hot smoked and left in a deli case, or from a tub of whitefish salad made several days ago.
Watch for
- Graded moderate for histamine, and that grade moves with freshness.Cooking, freezing and smoking do not remove histamine that has already formed in the fish
- Smoked whitefish, whitefish salad and whitefish spread are cured and stored products, so they belong in the high histamine column rather than alongside a fresh fillet
- Whitefish roe, sold as golden caviar, is salted and preserved and carries the same amine and sodium caveats as other roe
- Because whitefish is a loose label, the species in the packet varies.If you are chasing a fish reaction, log the actual species rather than the word on the front
- Plain fish is gluten free and low FODMAP, but battered, breaded or crumbed whitefish brings wheat, and the seasoning mix usually brings garlic and onion powder
