What to know about galangal

Galangal is a rhizome in the ginger family, but it is a different plant (Alpinia galanga) with a sharper, piney, almost citrus-peel bite where ginger is sweet and hot. That distinction matters if you are tracking triggers: galangal is graded moderate on salicylates, a full step below ginger, and it is clean on histamine, histamine liberation, nickel, glutamates, tyramine and every FODMAP group.
