What to know about catfish

Catfish is one of the quieter proteins in a trigger journal: graded clean on gluten, lactose, every FODMAP column, salicylates, oxalates, nickel, glutamates, tyramine and lectins, with no nightshade, sulfite or dairy flags. Its single non-clean grade is histamine, and only at borderline. Farmed catfish tends to go from pond to ice within hours, which is exactly the handling that keeps fish histamine low. Realistically, when a plate of catfish causes symptoms it is rarely the fillet. The cornmeal and flour crust, the blackening spice and the tartar sauce all grade far worse than the fish underneath them.

  • Tartar sauce carries the rest of the load: it grades high FODMAP and pro-inflammatory.Lemon and hot sauce-free seasoning keep the test clean if you are trying to isolate the fish
