What to know about mustard seeds

Whole mustard seeds are one of the cleaner things in a spice drawer. They grade A across FODMAP, fructans, lactose, gluten, histamine, nightshade, lectin, dairy protein, sulfite and SIBO fermentation, with only salicylate at C and a scattering of Bs (nickel, oxalate, tyramine, glutamates, histamine liberator). The point worth understanding is that mustard pungency is a reaction, not a flavour sitting in the seed. An intact seed keeps its glucosinolates and the enzyme myrosinase in separate compartments, and nothing happens until you crush it and add liquid. That is why whole seeds taste nutty and mild while the same weight of mustard powder mixed with cold water is fiercely sharp. Heat deactivates myrosinase, so seeds popped in hot oil, as in an Indian tadka, never develop the sharp compounds at all.

Watch for

  • Salicylate C is the only grade of real substance here.It is moderate and dose-dependent, and it matters most if you eat pickles, chutneys or seed-heavy curries where mustard goes in by the spoonful rather than the pinch
  • How you cook them changes the exposure more than how many you use.Tempered whole in hot oil the enzyme is destroyed and the sharp isothiocyanates never form; ground and mixed with cold liquid the same seeds are at maximum pungency
  • Nickel B and oxalate B: seeds sit slightly above most vegetables on both.Only relevant at high volume, such as a whole-seed pickle eaten daily on a systemic nickel protocol
  • Mustard is one of the declarable allergens in the EU and UK but is not a FALCPA major allergen in the US, so an American label can list it inside a generic spice blend without an allergen callout
  • Everything else is graded clean: low FODMAP, gluten free, no dairy, no nightshade, low histamine and low fermentation for SIBO
