What to know about salmon

Fresh salmon is remarkably clean on food chemicals: graded safe on histamine, salicylates, oxalates, FODMAPs, gluten and nickel, and rich in anti-inflammatory omega-3s. The two real caveats are not about fresh fish chemistry.
