Green cardamom (Elettaria cardamomum) is moderate in salicylates with a mild histamine-liberating and mild free-glutamate note, and clean on everything else: no histamine, no nickel, no tyramine, no FODMAPs. Watch for
- Moderate salicylate, the main chemical flag, and it stacks with the other warm spices in a chai or a garam masala rather than acting alone
- Ground cardamom is frequently cut with cheaper relatives, husk or unrelated filler because the real thing is so costly, so an unexplained reaction to a powder may be to whatever else is in the tin
