What to know about sablefish

Sablefish is not a cod. It is sold as black cod, sable and gindara, but it belongs to its own family and is unrelated to Atlantic or Pacific cod. That matters less than people hope for fish allergy, because the shared fish allergen is parvalbumin and it cross-reacts widely across species. Where sablefish genuinely differs is fat: it is the oiliest white fish on the counter, and almost all of it reaches you smoked, kippered or miso-marinated. Those preparations are why sablefish carries a moderate histamine grade rather than a clean one.

Watch for

  • Moderate histamine in the raw fillet, and much higher in the forms sablefish is usually sold as.Smoked sable from a deli counter has been cured, hot-smoked and then held cold for days, which is ideal conditions for biogenic amines
  • Saikyo-yaki and other miso marinades add a fermented soy layer on top of the fish: more histamine, more tyramine, more free glutamate, and gluten if the miso was made with barley or wheat
  • The name "black cod" is a market name only.A diagnosed cod allergy is about fish parvalbumin, so sablefish is not a safe substitute just because it is a different family
  • Sits in the FDA and EPA "Good Choices" mercury tier, meaning about one serving a week rather than a staple
