What to know about kvass
Kvass is the Eastern European drink made by fermenting stale rye bread with water, sugar and wild or baker yeast, usually finishing well under normal beer strength. The bread is not an incidental ingredient, and the grades say so bluntly: kvass sits at the top of the gluten scale. For coeliac disease or non-coeliac gluten sensitivity, traditional bread kvass is not a grey area, it is a gluten-containing drink in a bottle that looks like a soft drink. The rye brings a second problem alongside the gluten, grading high for fructans and high for total FODMAP, which is the same carbohydrate that makes rye bread itself hard on an IBS gut. The live ferment then layers on moderate histamine, a moderate liberator flag and moderate tyramine.
Watch for
- Top of the gluten scale, because it is brewed from rye bread.Low alcohol and a soft-drink presentation do not make it gluten free
- High fructans and high overall FODMAP carried straight over from the rye, so it behaves like a liquid serving of rye bread for a sensitive gut
- Moderate histamine plus a moderate liberator flag, the usual signature of an open lactic ferment
- Moderate tyramine from yeast activity, worth logging if amine-rich foods give you headaches or if you are on an MAOI
