What to know about pike
Pike is the ambush predator of northern lakes and rivers, and its biology is what makes it different from every other white fish in this database. It sits at the top of the freshwater food chain, it grows slowly and it can live for well over a decade, which is the textbook recipe for mercury accumulation. That, not food chemistry, is the reason pike appears in health guidance at all. A row of intramuscular Y-bones runs through the flesh, so most pike ends up minced and rebuilt into gefilte fish, quenelles or fish balls, and it is the binder and the recipe, not the fish, that carries the real trigger load.
