What to know about bream
Bream is the fish you get handed whole. Gilt-head bream, the silver sparid sold as orata in Italy and dorade in France, is scaled, gutted and then grilled or salt-baked in one piece, and it is among the most farmed species in the Mediterranean, which means most of what reaches a European counter was harvested and iced within a day. On triggers it is close to a blank page: A for salicylates, oxalate, nickel, glutamates, tyramine, gluten and every FODMAP subgroup, with a single mild B for histamine that is about handling rather than the species. The genuine complication on a bream page is naming. Bream covers dozens of fish in the Sparidae family, the same group sold as porgy in American markets and as scup on the US east coast, and in Britain the word can also mean a freshwater fish that is a different animal entirely.
