What to know about pike

Pike is the ambush predator of northern lakes and rivers, and its biology is what makes it different from every other white fish in this database. It sits at the top of the freshwater food chain, it grows slowly and it can live for well over a decade, which is the textbook recipe for mercury accumulation. That, not food chemistry, is the reason pike appears in health guidance at all. On our triggers the plain fillet is quiet: histamine A, tyramine A, no gluten, no lactose, no FODMAP group flagged, no nickel, no sulfites, no nitrites. The two flags it does carry are a moderate salicylate rating and a moderate oxalate rating, which are plant chemistries and look conservative for a lean white fish, but they are worth logging if you count either. The second thing to know about pike is that it is rarely eaten as a clean fillet. A row of intramuscular Y-bones runs through the flesh, so most pike ends up minced and rebuilt into gefilte fish, quenelles or fish balls, and it is the binder and the recipe, not the fish, that carries the real trigger load.

Watch for

  • Long-lived apex freshwater predator, so mercury accumulates with age and size.State and provincial advisories routinely single out northern pike with tighter limits than other freshwater fish, particularly during pregnancy and for young children, and a big old pike carries more than a small one
  • Graded moderate for salicylate and moderate for oxalate in our data, its only two chemistry flags.Worth a logged portion if you count either strictly, though a plain white fillet is an unlikely source of both
  • Pike mostly reaches the table processed.Gefilte fish is bound with matzo meal and built on onion, egg and sugar, quenelles de brochet are bound with bread and enriched with cream and butter, so gluten, fructans and dairy protein come from the recipe. Jarred gefilte fish has also sat in brine for months
  • Because of the Y-bones, pike is frequently sold minced or as a prepared fish paste rather than as a whole fillet, which means the product may be a blend of species. If you are testing pike specifically, buy it as an identifiable fillet
