What to know about bream
Bream is the fish you get handed whole. Gilt-head bream, the silver sparid sold as orata in Italy and dorade in France, is scaled, gutted and then grilled or salt-baked in one piece, and it is among the most farmed species in the Mediterranean, which means most of what reaches a European counter was harvested and iced within a day. On triggers it is close to a blank page: A for salicylates, oxalate, nickel, glutamates, tyramine, gluten and every FODMAP subgroup, with a single mild B for histamine that is about handling rather than the species. The genuine complication on a bream page is naming. Bream covers dozens of fish in the Sparidae family, the same group sold as porgy in American markets and as scup on the US east coast, and in Britain the word can also mean a freshwater fish that is a different animal entirely. If you are tracking reactions to specific fish, the label is worth writing down.

- The mild B for histamine is a storage grade, not a species trait.Whole fish that sat ungutted at ambient temperature builds histamine faster than a fillet that went onto ice, so buy it clear-eyed and firm and cook it the day you get it
- Bream is almost always finished with a squeeze of lemon, and lemon is a strong histamine liberator in our data.If a plate of grilled bream sets you off, the citrus deserves its own line in the journal before the fish does
- Restaurant whole fish usually arrives under butter, or a garlic and herb dressing.Dairy protein and the fructans in garlic are far more common triggers than anything in the bream, so log the dressing separately
- Market names blur badly here.Sea bream at the counter may be gilt-head, black bream or another sparid, and porgy or scup in the US belongs to the same family. Recording the exact name is what makes a repeat reaction interpretable
