Potassium bicarbonate is baking soda without the sodium. It raises low-sodium baked goods, puts the fizz and the faintly mineral finish into sparkling waters and effervescent tablets, softens the acidity of wine, and supplies the potassium in electrolyte powders. Watch for
Bicarbonate neutralises stomach acid and then releases carbon dioxide, so it can settle heartburn for a few minutes and then bring on belching and pressure. Using it repeatedly as an antacid is a different thing from eating it in a scone / Food amounts are small, but supplements and effervescent formulas can carry a meaningful potassium dose. That is the point at which kidney disease or a potassium-sparing blood pressure drug turns it into a conversation with your prescriber / Slightly soapy or bitter in baking if you overdo it, more so than sodium bicarbonate, because potassium salts hit bitter receptors / In wine it is a deacidifier, not a preservative. It drops excess tartaric acid out as crystals, which is why it has nothing to do with the sulphite line on the label
