Bream is the fish you get handed whole. Gilt-head bream, the silver sparid sold as orata in Italy and dorade in France, is scaled, gutted and then grilled or salt-baked in one piece, and it is among the most farmed species in the Mediterranean, which means most of what reaches a European counter was harvested and iced within a day. On triggers it is close to a blank page: A for salicylates, oxalate, nickel, glutamates, tyramine, gluten and every FODMAP subgroup, with a single mild B for histamine that is about handling rather than the species. The genuine complication on a bream page is naming.
