About Fresh Cheese
Fresh cheese is the unaged family of cheeses (mozzarella, ricotta, cottage cheese, cream cheese, queso fresco) and it flips the usual cheese trade-off.
Because it is not aged, it is low in histamine (grade A), the opposite of blue cheese or parmesan, but it is high in lactose (grade E) and carries moderate dairy protein. So the fresh cheeses that are safest for histamine intolerance are often the hardest on lactose intolerance. If a caprese salad or a bowl of ricotta leaves you bloated and gassy, lactose is the likely reason, not histamine.
