Overview
About Seitan
Seitan is pure wheat gluten, the stretchy protein washed out of wheat flour, which makes it the single most concentrated source of gluten you can eat and an absolute no for anyone with celiac disease or a wheat allergy.
Sold as vegan wheat meat, it is otherwise a clean, high-protein food on most triggers, but on gluten it is completely off the chart. Store-bought seitan is also usually marinated in soy sauce and vinegar, which layers histamine on top.

How Seitan scores
Watch for
What trips people up
- Pure vital wheat gluten, so it is the most concentrated gluten food there is and strictly off-limits for celiac disease or wheat allergy
- Not compatible with an EoE elimination diet, since wheat is one of the core foods that has to come out
- Can prompt histamine or mast-cell reactions in sensitive people, and marinated seitan adds histamine from soy sauce and vinegar
- High in lectins and hard on SIBO, so a reactive gut may struggle with it even setting the gluten aside

FAQ
Common questions about Seitan
Is seitan gluten free?
No, it is the opposite. Seitan is made from vital wheat gluten, so it is essentially gluten in solid form. It is one of the highest-gluten foods you can eat and must be avoided completely on any gluten-free diet.
Can I eat seitan if I have celiac disease?
No. Seitan is concentrated wheat gluten, so it is unsafe for anyone with celiac disease or a wheat allergy. Even a small amount can trigger the immune reaction and intestinal damage that gluten causes in celiac disease.
Is seitan a problem for histamine intolerance?
The plain gluten is not especially high in histamine, but seitan can still provoke histamine or mast-cell reactions in sensitive people, and most packaged seitan is marinated in soy sauce and vinegar, which are genuinely high-histamine. Gluten-free proteins like pea protein, rice or quinoa are the safer choices.
