About Quinoa
Quinoa is not a grain at all.
It is the seed of a plant in the same family as spinach, chard and beetroot, which is why it is naturally gluten free (graded A) and why it is a complete protein rather than a starch. Our data grades it clean on histamine, salicylates, nickel, glutamates and sulfites, so the two things worth knowing are specific: quinoa carries a high lectin grade (E), and every seed comes coated in saponins, the bitter soapy layer the plant uses as pest defence. Saponins are detergents. Rinsing them off is not a flavour preference, it is the difference between quinoa sitting well and quinoa feeling scratchy.

- Graded E for lectins, the strongest flag on this record. If you are working through a lectin protocol, quinoa sits at the top end alongside legumes rather than with rice
- Saponins are the practical issue most people miss. Rinse in a fine sieve until the water stops foaming, even with brands labelled pre-rinsed, because the residue is a surfactant and a known gut irritant
- Borderline (B) for total FODMAP load, so it is portion sensitive, although it is graded clean on fructans, GOS, fructose and polyols individually
- Graded pro-inflammatory (E) and not AIP compliant, so it comes out during a strict autoimmune elimination even though it passes every chemical-trigger column

Common questions about Quinoa
Is quinoa gluten free?
Yes. Quinoa is graded A for gluten because it is a seed, not a cereal grain, and contains no gluten protein at all. The only real risk is cross contact: quinoa is often cleaned, milled and packed on lines that also handle wheat, so if you have coeliac disease look for a certified gluten free pack rather than assuming.
Why do you have to rinse quinoa before cooking it?
The seed coat carries saponins, bitter soap-like compounds the plant produces to deter birds and insects. They taste harsh and they behave like a mild detergent in the gut, which is why unrinsed quinoa can feel irritating even to people who tolerate it normally. Rinse in a fine mesh sieve under cold water until the foaming stops, roughly a minute, then drain well.
Is quinoa high in lectins?
Yes. Our data grades quinoa E for lectins, the highest band. That puts it with the seeds and legumes rather than with rice, which is graded A. Thorough boiling in plenty of water, or pressure cooking, reduces lectin activity, but the grade reflects the food as commonly eaten and quinoa stays a poor fit for a strict lectin-avoidance phase.
Is quinoa low FODMAP?
It sits on the border. Quinoa is graded A on fructans, GOS, excess fructose and polyols, which is unusually clean, but B on overall FODMAP load, so a modest portion is generally fine and a big grain-bowl serving is where people notice bloating. Treat it as portion dependent rather than off limits.
