Overview
About Queso fresco
Queso fresco is a soft, unaged Mexican cheese, and being fresh flips the usual cheese trade off.
Because it is not aged, it grades high in lactose and very high in dairy protein, unlike hard aged cheeses where most of the milk sugar has fermented away. That makes it a common trigger for lactose intolerance and milk protein sensitivity. The upside of being young is low histamine and low tyramine, so it rarely causes the flushing or headaches that aged cheeses like parmesan or blue cheese can.

How Queso fresco scores
Watch for
What trips people up
- High in lactose, because it is a fresh unaged cheese that has not had time to ferment its milk sugar down
- Very high in dairy protein (casein), a frequent trigger for a cow milk protein sensitivity
- Low in histamine and tyramine, so it is a gentler cheese if amines rather than lactose are your issue
- Poor for SIBO and pro inflammatory, so a large portion can feed gut symptoms

FAQ
Common questions about Queso fresco
Is queso fresco high in lactose?
Yes. Queso fresco is a fresh, unaged cheese, so it keeps most of its milk sugar and grades high in lactose. Hard aged cheeses such as parmesan or cheddar lose most of their lactose during aging, which is why they are usually easier on a lactose intolerance than a fresh cheese like this one.
Is queso fresco low in histamine?
Yes. Because it is young and unaged, queso fresco grades low in histamine and tyramine, so it is one of the friendlier cheeses if your reactions are driven by amines rather than by lactose or milk protein.
Why does fresh cheese have more lactose than aged cheese?
Aging lets bacteria break down lactose over weeks or months, so long aged cheeses end up very low in it. Queso fresco is eaten within days, so its lactose stays high. If lactose is your trigger, a well aged cheese is often easier to tolerate than a fresh one, even though both are dairy.
