Overview

About Monterey Jack

Monterey Jack is a mild, semi-firm American cheese, and its main trigger is dairy protein: it grades high in casein and whey, with moderate lactose on top.

Because plain jack is young and mild, its histamine and tyramine sit in the moderate range rather than the high band you get from aged cheddar or the darker colby jack. So most people who react to Monterey Jack are reacting to the milk proteins or the lactose, not to a big histamine load.

How Monterey Jack scores

Watch for

What trips people up

  • High in dairy protein (casein and whey), the most common reason a milk-sensitive person reacts to it
  • Moderate lactose, since jack is not an aged low-lactose cheese, so a larger portion can bother lactose intolerance
  • Moderate histamine and tyramine: milder than aged cheddar or colby jack, but not a genuinely low-histamine cheese
  • Carries some free glutamate, which can register as a savory trigger if you are sensitive to MSG-type foods

FAQ

Common questions about Monterey Jack

Is Monterey Jack high in histamine?

Only moderately. Monterey Jack is a young, mild cheese, so it holds less histamine than aged cheddar, gouda or the more matured colby jack. It is not a true low-histamine cheese, but for histamine intolerance it tends to sit below the strongly aged cheeses. A dairy-free vegan cheese grades a step lower again if you need to push the histamine load down further.

Why does Monterey Jack upset my stomach?

Two reasons usually. It grades high in dairy protein (casein and whey), which milk-sensitive people react to, and it keeps a moderate amount of lactose because it is not an aged, low-lactose cheese. A larger serving can bring on the bloating and gas of lactose intolerance.

Is Monterey Jack lower histamine than colby jack or cheddar?

Generally yes. Plain Monterey Jack is younger and milder, so it grades a step below colby jack and aged cheddar on histamine and tyramine. If histamine is your issue, plain jack beats the aged and blended jacks, and a fresh cheese beats all of them.
