About Antelope
Antelope means two different animals on two different continents: pronghorn on a North American hunting tag, springbok, kudu or impala on a southern African plate.
Both are exceptionally lean wild ruminants and both grade A across the whole trigger chart, with no histamine, tyramine, salicylate, oxalate, FODMAP, nickel, sulfite or nitrite load in the fresh meat. Nothing about the species is the problem. What matters with antelope is what happens after the shot, because it is mammalian meat and therefore inside the alpha-gal picture, and because far more antelope is eaten dried and cured as biltong than is ever eaten fresh.

What trips people up
- Alpha-gal covers antelope the way it covers beef, and there is a nasty overlap here: the people most likely to be eating wild antelope are the people spending most time in tick habitat, which is where the sensitisation comes from in the first place
- Biltong and droewors are a different food from the animal they came from. Air-dried, salted, vinegar-cured game is matured protein, and maturation is exactly how meat accumulates histamine and tyramine. Fresh antelope sitting fine while biltong does not is an amine story, not a species story
- Game is routinely hung for days before butchering, which is deliberate ageing. Ask how long the carcass hung if amines are something you track
- Wild-shot game taken with lead ammunition can carry metal fragments far from the wound channel, which is why several health departments advise against lead-shot venison and antelope for young children and during pregnancy

Common questions about Antelope
Can you eat antelope with alpha-gal syndrome?
No. Alpha-gal is present in every non-primate mammal, and antelope is a mammal, so it belongs with beef, pork, lamb and venison rather than with the poultry and fish that stay safe. Hunters are worth singling out: tick exposure and game eating go together, so a hunter who has started reacting hours after red meat should ask about alpha-gal testing before assuming the game itself disagreed with them.
Is biltong high in histamine?
Yes, and the underlying game being clean does not change that. Biltong is salted, vinegar-treated and air-dried over days, and any meat that matures builds histamine and tyramine as it goes. Cooking cannot reverse it. If you are managing histamine intolerance, fresh antelope and biltong made from the same animal belong in different columns of your journal.
Is antelope low FODMAP?
Yes. Plain antelope contains no fermentable carbohydrate whatsoever, so it is unrestricted on a low FODMAP diet. Watch the marinade instead, since game is so often cooked down with onion, garlic and red wine to soften how lean it is.
