About Refined grains

Refined grains are the umbrella for white flour, white rice, degermed cornmeal, instant grains and most packaged baked goods and breakfast cereals.

Refining means the bran and the germ have been milled away, leaving the starchy endosperm. That removes the fibre, most of the magnesium and B vitamins, and, counterintuitively, most of the lectins and phytates too, since those concentrate in the bran. Our data grades the category D for gluten, because the refined grain most people eat is wheat, and E for inflammation. It is otherwise clean on histamine, nickel, sulfites and lactose. This is more of a nutrition-pattern page than a sensitivity page, and it is worth being honest about that.

What trips people up

  • Graded D for gluten, which reflects the category being wheat dominated. Whether a specific refined grain contains gluten depends entirely on the parent grain: refined wheat, barley and rye do, white rice and degermed corn do not
  • Graded E for inflammation, the strongest claim on this record, and E for EoE compatibility. Both are pattern judgements about refined starch rather than a reaction to a single compound
  • Enriched is not the same as whole. Enrichment puts back a short list of B vitamins and iron. It does not put back the fibre, the magnesium or the germ oils that were milled out
  • The trade-off runs both ways. Refined flour is lower in lectins and phytates than wholemeal, which is why some people with sensitive guts genuinely feel better on white bread than on brown, and why the fibre advice does not fit everyone
  • Our data grades this category clean on the individual FODMAP columns, but that is the category average, not a green light for wheat-based members of it. Wheat flour and bread carry their own fructan grades on their own pages

Common questions about Refined grains

Are refined grains a food sensitivity trigger, or just a nutrition problem?

Mostly a nutrition problem. Across the chemical trigger columns, histamine, salicylate, nickel, sulfite, glutamate and lactose, refined grains grade clean. The one genuine sensitivity flag is gluten (D), and that comes from the wheat, barley and rye members of the category rather than from refining itself. If you are hunting a reaction, the useful question is which grain, not whether it was refined.

Do refined grains contain gluten?

Some do and some do not, which is why the category grade sits at D rather than E. White flour, semolina, couscous and pearl barley are refined and contain gluten. White rice, rice flour, degermed cornmeal and refined millet are refined and contain none. Refining changes the fibre and mineral content, not whether the grain ever had gluten protein in it.

Does refining remove lectins?

Largely, yes. Lectins and phytates sit in the bran and germ, so milling them off strips most of them out. That is a real and underdiscussed reason some people with irritable guts tolerate white flour better than wholemeal, and it is why our data grades wholegrain foods higher on lectins than their refined versions. It is not an argument that refined is healthier overall, just that the trigger profile is different.

Is white rice a refined grain, and is that a problem?

White rice is refined, the bran and germ are polished away, and it still comes out as one of the cleanest staples in the whole database: graded A on gluten, FODMAPs, histamine, salicylate, lectins and nickel. It is a good illustration that refined is a processing description, not a trigger grade. Judge each grain on its own record.
