About Pinto beans

Pinto beans are the refried-beans and burrito staple, and while they are anti-inflammatory and clean on gluten, lactose and histamine, they stack up several separate triggers at once: they are high in galacto-oligosaccharides (the GOS FODMAP that makes beans famously gassy), high in salicylates, and high in nickel.

That combination is why a burrito bowl can leave a sensitive gut bloated even when the same person tolerates rice or plain meat fine.

Are pinto beans low FODMAP?

No. Pinto beans are high in galacto-oligosaccharides (GOS), a FODMAP that human guts cannot fully digest, so it ferments in the colon and produces the gas and bloating beans are known for. Rinsing canned pinto beans and keeping to a small portion lowers but does not remove the GOS. Firm tofu, quinoa and rice are gentler protein and carb swaps.

Why do pinto beans cause more than just bloating for some people?

Beyond the GOS FODMAP, pinto beans are also high in salicylates and high in nickel.
