Invert sugar is table sugar taken apart.
Sucrose is a glucose molecule bonded to a fructose molecule, and heating it with acid or treating it with the enzyme invertase splits that bond, leaving a syrup of free glucose and free fructose in roughly equal measure. - Free fructose behaves differently from bonded fructose for people with fructose malabsorption. If sugar is fine for you but honey and apples are not, invert sugar belongs on the list to test.

Is honey the same as invert sugar?
Chemically they are close relatives. Bees produce honey by adding the enzyme invertase to nectar, which splits the sucrose into free glucose and fructose, so honey is essentially a naturally made invert sugar with water, minerals, pollen and aromatics along for the ride. Honey does run a little higher in fructose than glucose, which is why it grades worse on excess fructose in most datasets.
