Is cauliflower low FODMAP?
Not really. Cauliflower is high in mannitol, a polyol FODMAP, which is why the low-carb darling behind cauliflower rice and cauliflower pizza crust can wreck a sensitive or SIBO gut. It is clean on histamine, oxalate and nickel and is genuinely anti-inflammatory, so the trouble is almost entirely fermentation: it grades high FODMAP, high polyol and poor for SIBO, plus moderately high in salicylates.

Why does cauliflower cause bloating and gas?
Cauliflower is high in mannitol, a polyol that the small intestine absorbs poorly. It travels to the colon where gut bacteria ferment it, producing gas, bloating and cramping. That is why it bothers many people with IBS even though it is a healthy vegetable.
Is cauliflower rice low FODMAP?
Only in small portions. A small serving of cauliflower can stay under the FODMAP threshold, but the big keto-style bowls of cauliflower rice or a whole cauliflower crust push well past it into high-mannitol territory. Portion size is everything here.
Can I eat cauliflower with SIBO?
It is one to be cautious with. Cauliflower ferments readily and grades poorly on a low-fermentation SIBO approach, so it tends to feed symptoms during a flare. Lower-fermentation vegetables like carrot, zucchini or bok choy are usually gentler.
