About Apple butter

Apple butter is apples slow-cooked for hours until the water boils off and the fruit sugars concentrate, which is exactly what makes it a strong gut trigger.

It is very high in excess fructose and high in the polyol sorbitol, both FODMAPs, so a spoonful delivers far more fermentable sugar than a fresh apple. If apples or apple juice give you bloating, gas or diarrhoea, apple butter tends to be worse gram for gram.

Yes, it is high FODMAP. Apple butter is very high in excess fructose and high in sorbitol, and because it is cooked down from many apples, the FODMAPs are concentrated. Even a tablespoon can be enough to trigger bloating or diarrhoea in someone with fructose malabsorption or IBS.

Is apple butter worse than a fresh apple or apple juice?

For fermentable sugars, apple butter is the most concentrated of the three. A fresh apple and a glass of juice are already high in fructose and sorbitol, and apple butter reduces several apples into a spoonful, so the sugar load per bite is higher.

Does apple butter contain sulfites?
