What to know about sodium nitrite
Sodium nitrite (E250) is the curing salt behind bacon, ham, hot dogs, salami and pastrami. It is the ingredient that fixes the pink colour, builds the tangy cured flavour and, more importantly, stops Clostridium botulinum from growing in meat that sits at deli temperatures. It grades E for nitrites, the top of that scale, so if cured meat is a reliable headache or flush trigger for you this is the compound to suspect rather than the pork.
Watch for
- Graded E for nitrites, the highest grade on the scale.A cured meat sandwich delivers far more nitrite in one sitting than anything else in an ordinary diet
- Nitrite is a nitric oxide donor and dilates blood vessels, which is the accepted mechanism behind the long-documented "hot dog headache".Susceptibility is very individual and dose dependent
- In the acid of the stomach, nitrite can react with amines from the meat to form nitrosamines, and high dry heat accelerates it.This is why hard-fried bacon is the worst case and why manufacturers add ascorbate or erythorbate alongside the nitrite to suppress the reaction
- IARC classifies processed meat as carcinogenic to humans (Group 1) for colorectal cancer, and ingested nitrite under conditions that cause nitrosation in the body as probably carcinogenic (Group 2A).The classifications describe strength of evidence, not size of risk
- Mildly raised on histamine and tyramine (both B) and graded D for inflammation, because the salted, aged, smoked products it lives in carry amines of their own
