What to know about guar gum
Guar gum is milled from the endosperm of the guar bean, and chemically it is a galactomannan, a long chain of mannose sugars with galactose branches. That structure is the whole story. Humans have no enzyme for it, so it passes to the colon intact and is fermented there, which is why guar gum is one of the few hydrocolloids that genuinely earns a FODMAP grade rather than passing through inert. It also swells dramatically in water, and that property is behind both its usefulness as a thickener and the worst episode in its history as a supplement.
Watch for
- Graded borderline on FODMAPs, borderline for SIBO fermentation and moderate on lectins.Unlike most gums, this one is a real fermentable load at dose, so bloating and gas from a guar thickened product are a plausible mechanism rather than a coincidence.
- The dose in food is small and the dose in a supplement is not.A few grams thickening a litre of ice cream is very different from a capsule sold as an appetite suppressant.
- The swelling is the hazard.In the early 1990s the guar gum diet pill Cal-Ban 3000 caused oesophageal and intestinal obstructions, including deaths, because the tablets expanded before they reached the stomach. The FDA banned it in 1992. Never take a bulking gum dry, and never without a full glass of water.
- Partially hydrolysed guar gum, sold as PHGG, is a different product.The chain is cut short so it dissolves thin instead of thickening, and it is used deliberately as a gentle prebiotic fibre in IBS. Do not read this page onto that one.
- Guar is a legume.Occupational asthma and sensitisation in guar processing workers are documented, and although allergic reaction to dietary guar is rare, it is not impossible.
